Title: Daily Backup - New Folder Each Time

Not sure if I missed the setting but I would like a backup each evening and in the backup have its own folder.  Is this an option?

There isn't such a setting I'm afraid, but if I were to add one it would be more suited in Yummy FTP Watcher I think.

You should be able to AppleScript the Finder to create the folder, then instruct Yummy to transfer to it. That's all I can offer right now.
