If I make an FTP alias and email it to a customer will they be able to drop files on it to upload them or do they need YummyFTP installed on their machine?

Not if you make it a stand alone application; that is accomplished by selecting "Secure" instead of "Standard" in the FTP Alias dialog. Secure hides the server address, log-in and passwords PLUS it contains a mini version of the Yummy engine. A way, way nifty feature.
