The simplest thing I can't figure out

Ugh... I can't figure out how to tell a specific website where to go on the local drive.  They have in preferences, but I need a different place to open for every FTP site I have. 

Also, what is the quickest mouse click to go back one directory on the local side.

Select the site in the Bookmarks list and click on Edit.  Under the Advanced tab, select the local path in the topmost pane and untick "Use setting from preferences".

To go back up the directory tree, click on the Back button top left of the local view.  If DualBrowse is switched on, the remote view will track the local one.
